There has never been a more perfect time to fire up the barbecue. Spring has arrived and as you roll into the summer months and enjoy more meals alfresco, try one of these easy grilled fruit dishes. You’ll find these dishes are the perfect dessert or side dish. Enjoy!
COCONUT BROWN SUGAR GRILLED PINEAPPLE
Tip: This dessert is the perfect end to any meal. Grilled pineapple has a natural sweetness that is hard to beat.
1 Pineapple, trimmed and cut into wedges or circles
½ cup butter, melted
¾ cup brown sugar, packed
2 Tbsps. Honey
1 teaspoon imitation coconut extract
Combine melted butter, brown sugar, honey and coconut extract in a medium bowl. Stir until well combined and smooth in consistency. Set aside.
Preheat grill on medium heat to 350 degrees F.
Once grill is preheated, place wedges on grill sideways to create grill lines. Grill until golden brown lines can be seen on each side.
Once pineapple wedges are removed from grill and placed on tray, immediately lather on glaze so that it melts over it. If needed, microwave the glaze in a microwave safe bowl for 30 seconds and proceed to lather on pineapple.
Serve pineapple warm and top with whip cream.
GRILLED CINNAMON SUGAR BANANAS
Tip: Not sure too many people have their grill fired up in the morning, but this recipe is great for breakfast, brunch or a snack.
5 ripe bananas
1/2 cup coconut oil
1/2 cup sugar
1 Tbsp. cinnamon
Combine sugar and cinnamon and stir until mixed.
Peel a ripe banana (not too ripe).
Dip in coconut oil and cover fully with oil.
Then dip in cinnamon sugar mixture.
Place on the grill over medium heat and cook each side until it brown with grill marks.
Tip: Serve grilled peaches for dessert and turn any leftovers into a peach salsa or jam.
4 ripe but firm peaches
1/4 cup dark brown sugar
2 tsps. vanilla
Clean grill grate and preheat grill to high.
Wash and halve or quarter peaches, leaving skin on and removing pits. In a large bowl, toss peach quarters, brown sugar and vanilla until all peaches are coated. Let sit 15 minutes until coating is caramely. Toss again to coat evenly.
Place peach slices on grill, skin side up. Cook for 3-4 minutes, reducing heat as necessary to avoid burning. Turn peaches (still skin side up) to cook the other fleshy side for another 3-4 minutes, or until grill marks are visible and peaches are cooked.
Remove peaches from grill to a plate and cool a bit before serving.
SAVORY PEARS WITH GRUYERE
Tip: Serve these pears as a sweet and savory side dish or as a starter to a meal in place of a salad.
4 ripe but firm pears
Wash and cut pears in half and remove the center and seeds.
Place pears directly on the grill over direct medium high heat. Grill for 5 minutes on each side.
Top the warm grilled pears with gruyere, a drizzle of honey and walnuts.
Tip: These fruit kebabs are a party-ready dessert or perfect for a family dinner – you can personalize kebabs for picky family members and kids love to eat anything off a stick!
1 cup blackberries
1 cup chopped strawberries
2 cups chopped pineapple
Other fruit if desired (kiwi, peaches, and bananas would all work great!)
1 cup white chocolate chips (use regular chocolate chips if you don’t like the white variety)
1 Tbsp. vegetable oil
Skewer sticks – soaked for 30 minutes so they don’t burn
Preheat your grill to medium high heat. Spray with nonstick spray.
Assemble your kebabs as you like them, layering the fruit on the kebab skewers.
Grill each kebab for approximately 5 minutes. The fruit will soften and you will see grill marks. You can eat them at any point, so grill however you see fit!
Microwave the chocolate in a microwave safe bowl in intervals of 20 seconds until its melted. Add the vegetable oil and stir. This just serves to thin the chocolate to make it easier to drizzle on the fruit.
Drizzle the kebabs with white chocolate and serve!
Yogurt Lime Dip
Tip: This dip will pair perfectly with any grilled fruit.
1 package (3 ounces) cream cheese, softened
¼ cup plain yogurt
2 Tbsps. honey
1 Tbsp. brown sugar
1 Tbsp. lime juice
1 tsp. grated lime peel
In a small bowl, beat cream cheese until smooth. Beat in the yogurt, honey, brown sugar, lime juice and peel. Cover and refrigerate until serving.
